Preheat the oven to 350°F (180°C).

In a small saucepan, combine the water, coconut oil, and sugar. Bring to a boil, then reduce the heat to low and add the 1/2 cup of flour.

Remove from heat; add the flaxseed mixture and the teaspoon of vanilla extract.

Transfer the mixture to a piping bag and pipe the churros onto a baking sheet lined with parchment paper or greased.

Bake for 10 minutes.

When they’re done, prepare a mixture of sugar and cinnamon. Brush the churros with coconut oil, then roll them in the sugar and cinnamon mixture.
