Ingredients

Serves 2 servings
  • 1/2 cupwater (120 ml)
  • 1/2 cupflour (any kind you like) (about 60 grams)
  • 1 tablespooncoconut oil
  • 1/4 cupground flaxseed mixed with water (about 30 grams)
  • 1 tablespoonbrown sugar or monk fruit sweetener
  • 1 pinchsalt
  • 1 teaspoonvanilla extract
  • Sugar of your choice, coconut oil, and cinnamon for coating

    Preheat the oven to 350°F (180°C).

  2. 2

    In a small saucepan, combine the water, coconut oil, and sugar. Bring to a boil, then reduce the heat to low and add the 1/2 cup of flour.

  3. 3

    Remove from heat; add the flaxseed mixture and the teaspoon of vanilla extract.

  4. 4

    Transfer the mixture to a piping bag and pipe the churros onto a baking sheet lined with parchment paper or greased.

  5. 5

    Bake for 10 minutes.

  6. 6

    When they’re done, prepare a mixture of sugar and cinnamon. Brush the churros with coconut oil, then roll them in the sugar and cinnamon mixture.
