Easy midweek meal, comfort food with minimal prep time and minimal ingredients! Made using #seasonsupply red onions.

Drizzle a tablespoon of oil over the raw chicken in a roasting tin. Season with salt and pepper, roast according to the time instructions on the packaging. Baste in its own juices occasionally.

When the chicken is cooked, allow to sit at room temp.

Slice the onions and fry them gently in a frying pan with about 4 tbsp of chicken juices from the roasting pan. Sprinkle over the garlic powder and white pepper and cook until soft and starting to brown slightly.

While the onions are cooking, microwave your rice according to the packet instructions.

Add the cooked rice to the cooked onions, stir well then season to taste with salt and pepper.
