I have it on good authority (my mum!) that pumpkin and courgette flowers are now more available back in the UK :) I hope you can find them wherever you come from. They melt in your mouth! Soooooo delicious! Here's just one way to cook them #italian

I have it on good authority (my mum!) that pumpkin and courgette flowers are now more available back in the UK :) I hope you can find them wherever you come from. They melt in your mouth! Soooooo delicious! Here's just one way to cook them #italian

Chop off the stems. Gently open the flower to remove the inner part using a sharp knife

When removed, wash the flowers in cold water inside and out to remove any pollen. Dry carefully but thoroughly especially inside. Set aside

Mix batter. Sieve flour into a bowl. Add eggs. Mix and then add milk. Mix. Add water. Mix very very well. Set aside to rest for 30 mins.

Heat enough oil in a wok for frying. Gently dip and cover the flowers in batter then fry in oil until golden brown on both sides. Drain on kitchen paper, sprinkle with salt and serve as a starter with prosecco :)
