First, mix the crushed Marie biscuits, butter, and 1/2 cup of the powdered sugar until crumbly.

Coat the pineapple slices with the remaining sugar and pineapple essence.

In a bowl, beat the egg whites, sugar, flour, and essence for 10 minutes.

Grease a baking dish with butter and sprinkle a little flour.

Arrange the pineapple slices at the bottom of the dish, then add a layer of the biscuit mixture, followed by a thin layer of the egg mixture. Repeat for 2 or 3 layers.

Finally, add a thick layer of the biscuit and egg mixture on top, sprinkle with candied fruit, and bake at 340°F (170°C) for 15 minutes. The pie is ready.
