In a large pot, add the beef, olive oil, onion, parsley, cilantro, and chopped tomatoes. Sauté everything well, then add the spices, carrots, and turnips. Let everything cook for a bit.

Place the couscous in a large bowl, add olive oil, and mix well. Steam the couscous in a couscous steamer (couscoussier). When steam starts to come through the couscous, remove it, sprinkle with water and salt, and let it absorb the water. Return the couscous to the steamer for a second steaming. Meanwhile, add the butternut squash, clarified butter, and potatoes to the pot and let everything cook. When the couscous is steamed again, sprinkle it lightly with water and return it to the steamer until fully cooked.

Once everything is cooked, serve the couscous with the meat and vegetables. Enjoy!
