Fried Eggplants
I discovered this yummy treat and now I'm obsessed!!
Steps

Wash and cut the eggplants into bite size pieces

Place them in a bowl, sprinkle some salt and black pepper
- 3
Mix well then set aside. Heat up oil in a frying pan, then fry the eggplants for about 3-5 minutes stirring occasionally. At this point, they are ready to serve but I like some extra crisp so I toss them in the oven for 10 minutes over 175°c.
