
Ok, I made this, but for me, it was more a what do I have. So i used skillet taco sauce instead of enchilada. I do not like tomatoes, so i added mushrooms. I didn't have shells, so i used what i did have. I used 3 cups of water to make up for the tomatoes and only 8 ounces of taco sauce. I only had habanero Jack cheese (white) so i used that. And you know what, it came out great! Little hint of spice, very filling. Thank you for sharing, even if mine was not exact. Almost forgot, i used two chicken thighs, fresh, cubed, and browned in the pan before starting the rest.

i was thinking maybe a little Anaheim pepper (or Bell pepper) chopped up might be nice also
