caldo de albondigas(meatball stew)

Ingredients

  1. 2 lbground beef
  2. 1 cupwhite rice
  3. 1egg
  4. 5red potatatos cut in chunks
  5. 2handfull baby carrots cut in half
  6. 2chayote cut in chunks
  7. 5dried california chile pods boiled to tender
  8. 2garlic cloves
  9. 1salt to taste

Cooking Instructions

  1. 1

    mix ground beef , rice and egg in a bowl and roll out 2 inch balls.

  2. 2

    in a large pan bring to a boil water and salt, add meat balls. when they start to float to top add all chunked veggies.

  3. 3

    in the blender add chiles garlic and water they were boiled in and blend till smooth. add to pot and let cook on medium low for about 1/2 hr.

    add salt to taste.

love it! I add some paprika, garlic powder, chicken bouillon, little of sugar and for topping I add Tapatio hot sauce and cabbage. yummy!
