Pounded Cucumber with Refreshing Pickled Plum and Miso Sauce

cookpad.japan @cookpad_jp
Since I love the combination of umeboshi and miso, I tried it out on pounded cucumber.
It's best to use unsweetened umeboshi. If left sitting for too long, this will become watery, so serve as soon as you mix in the seasoning. It has 53 kcal per serving. Recipe by LazyHata

Done in 3 minutes! Super Easy Cucumber with Umeboshi Pickled Plum Sauce
This dish is great for those times when you need one more dish but you don't have enough time nor ingredients.I came up with this idea just at such a moment and used what I could find in the refrigerator.Honestly, it only takes 3 minutes to make. Easy, but an authentic taste. The tartness of salt-cured plum (umeboshi) is great in this recipe. If using sweet honey-soaked umeboshi, replace the mirin with an equivalent amount of Japanese noodle dipping sauce.Use mentsuyu (Japanese noodle dipping sauce) that's been concentrated about 3-4 times.Adjust the quantity to your liking. Kamaboko and Cucumber * Tossed in Umeboshi Mayonnaise Sauce
I came up with this new dish by combining an idea from a recipe from my reliable Cookpad mate, "tomimo" with one of my own recipes.Toss the ingredients in the dressing right before serving. While it also tastes good tender, it will be a bit watery. Adjust the amount of umeboshi depending on the type you use. Recipe by Chikori mama

Tender Squid and Green Onions with Vinegar Miso Sauce
I love cold seafood and vegetables with vinegared miso. I also make it with squid or cured horse mackerel. You can make this with the miso you already have in stock.I made it with a country-style miso that we received as a gift. The ingredients vary a little depending on how salty the miso is. Don't add all the seasoning ingredients at once; taste as you add them for the best results. Recipe by -ringo-

Chinese-style Cucumber and Imitation Crab in Vinegar Sauce
I think that vinegar dishes taste great in the summer. I substituted the sesame oil from the cucumber vinegar dish that I normally make with mustard, and made a Chinese-style version.Make sure to check the flavor before serving it. Add salt if it is weak, or add a little water if it is too strong. It also tastes great if you substitute mustard for julienned or grated ginger. Recipe by Iku..

Korean-Style Sesame Seasoned Burdock with Chili Pepper and Vinegar Miso Sauce
This chili pepper miso sauce with vinegar is a variation of the Korean "Chogochujang" sauce, which is often used for sashimi and seasoning for other dishes. I uploaded this recipe because when I combined the leftover sauce with some burdock, it came out really tasty. You can use the sauce with fresh or boiled vegetables, boiled meat (chicken or pork), or sashimi. It's really delicious and very convenient to make a lot so that you have it in stock. The main point is to thoroughly remove all of the water from the burdock after boiling. This recipe uses Korean brand powdered chili pepper, but if you can't get any, you can use ichimi chili pepper powder. But Japanese chili pepper is really spicy, so adjust it to taste. You can also adjust the amount of vinegar and sugar. Recipe by Heartful Kitchen Rei

Pork with Salt Sauce and Cucumber
My oldest son loves cucumber so much, you might wonder if he's actually a kappa. Plus, he adores salty foods. So, this recipe dedicated to him.The amount of salt at step 5 depends on how much salt and pepper you add at step 3, so add to taste. At summer time, you'll get lots and lots of cucumbers and don't know what to do with it When that happens, you can use it all up in this delicious way.Try this recipe using other vegetables like cabbage too. White Miso Dengaku Miso Sauce
I don't use red miso much, so I make dengaku miso sauce with white miso (dengaku miso is often made with red miso). The color is gentle, and I love this sauce.Since it's microwaved several times, the container will get pretty hot, so be careful not to burn yourself. Recipe by Fuwarin

Pressure Cooked Furofuki Daikon Radish with Meat-Miso Sauce
My dear daughter loves furofuki daikon, a traditional simmered daikon radish dish! It's good when simmered for a long time, but that's a lot work, so I like to let my pressure cooker to do it.If you don't add ground meat, this is a plain sweet miso sauce. For 4 servings. Recipe by Ha-tannookkasan

That Sauce! Chinese-style Salt Cured Cucumbers
I wanted to make an easy-prep, salt-cured cucumber that even children would like. When I used the recipe with the seasoning from shirasu sauce, it turned out delicious. It's now one of my daughter's favorites. For those who like spice, add red chili peppers when curing.Thoroughly dissolve the sugar. Curing for 2 hours gives a perfect crunchiness and the cucumbers become well cured. If longer, the seasoning will blend in, but the crunchiness will disappear. If you peel the cucumbers a little, they will cure more evenly. Recipe by Tsukonindesumasu

Steamed Aubergine and Baby Scallops with Chili, Vinegar and Miso Sauce
Chojang is a staple sauce in our household, as it is great with poached meat and seafood, sashimi and steamed vegetables. The baby scallops were cheap one day, and there was only one packet left in the shop. There was too few for all of us, so I decided to put them together with vegetables to make a substantial dish. When you make fine cuts on the cucumber for a decoration, always allow your knife point to touch the chopping board so as not to cut completely through the cucumber. Until you become used to doing this, place chopsticks alongside the cucumber (lengthways in front of you and behind the cucumber) and make fine cuts. Using sliced cucumber is fine instead of using a decorated one! Recipe by Heartful Kitchen Rei

Salmon and Burdock Root Stewed in Sesame Seed and Miso sauce
I want to serve well-seasoned stewed dishes to my family that'll go well with a bowl of white rice. But I also want to cut down on the amount of salt used. So the sesame oil and ground sesame seeds adds flavor even with a light seasoning. The burdock should be slightly firm after cooking. If you prefer the burdock to be softened more, cook for a little longer at Step 4. To avoid the salmon from flaking while cooking, shake the pan at Step 6 or use a spatula to mix briefly to blend with the seasoning ingredients. Recipe by caramel-cookie

Delicious Tofu with Umeboshi Mayo Sauce
Drain excess water from the tofu first, cut into small pieces, then mix with the dressing. It prevents the dish from being watery. It also helps to improve the dish's appearance, and makes the dish absorb the flavor better.Use your preferred amount of umeboshi. You can just top the mixed seasoning on the chilled tofu, instead of mixing it all together. You can make many variations by using nori-seaweed tsukudani (simmered in soy sauce), kimchi, spicy salted cod roe, takana pickles, shibazuke (pickled vegetables in salt and shiso leaves), nametake mushrooms, tuna and soy sauce, etc... as a dressing. It's also delicious to sprinkle garnishes, such as sesame seeds. Recipe by Hironozomiyuuma

Octopus and Cucumber Marinated in Garlic, Ginger, and Soy Sauce

So, imagining the taste, I made it.It's easy, but my husband really likes it, so decided to post this recipe. If desired, add myoga ginger and shiso leaves. You can use garlic soy sauce instead. (If you use garlic soy sauce, you do not need grated garlic.) For 2 servings. Recipe by Komomomomo

Chicken Drumsticks & Daikon Radish Simmered with Miso & Soy Sauce
I added miso to make this variation of my regular soy sauce-based simmered chicken drumstick and daikon radish recipe. If you wait about half a day before eating it, the flavors will be absorbed better. If you don't have time for that, just simmer the daikon radish longer, until it absorbs the flavors.
