Lemon cupcakes with raspberry frosting

A moist light bright flavored cupcake!

I try not to make the the icing too sweet. Currants are s very English thing to add but chocolate chips or other fruit taste just as good.

I swapped fresh strawberries with freeze-dried ones and my oh my, these babies are packed with so much flavor, plus it helps my cream cheese frosting stay stable and pretty!

So moist and tasty! This can also be baked in a bundt cake, round cakes or sheet cake. I've also made this with strawberry cake mix, and strawberry gelatin and topped with whipped cream and sliced strawberries.

After making the White Truffle Cupcakes everyone wanted to try new flavor variations. So heres my next one a fresh Strawberry Cupcake with a dark chocolate Lindor liquid center truffle topped with a fluffy, creamy fresh strawberry whipped cream. It reminiscent of a chocolate covered strawberry!

I served these cupcakes to people who didn't particularly like red velvet cupcakes in the past, yet they loved these! The frosting really elevates the cupcakes to yummy goodness! Will turn any non-red velvet cupcake fan into a super fan! :)

It's like eating a chocolate covered marshmallow or a smores with out the graham cracker. You get a rich chocolate brownie base and a melt-in-your-mouth light as air toasted marshmallow topping.

These cupcakes are quick to prepare and they are light and moist with the extra surprise of the mini chips. They are perfect for kids and adults as well, everyone gets there own little delicious cake!

Wow! These are the easiest cupcakes and they come out so moist. I was seriously impressed. Tried this recipe in metric because I finally bought a kitchen scale! I might be a convert. Really liking small batch recipes. I can only eat baked goods for about 2 days and they start to go stale after a while anyway. No one wants food waste! I had leftover cream cheese frosting and they turned out delicious but you could also pair with a classic or flavored buttercream.

I used a cupcake decoration kit I found at a store. You can recreate it by printing pictures online then gluing it to toothpicks. These turned out gorgeous!

These white chocolate cupcakes are tender and fluffy with a decadent liquid white truffle center. The truffles shell melts into the cupcake with the white chocolate center remaing soft. The frosting is a creamy, not to sweet whipped white chocolate marscapone frosting. Store these, covered in the refrigerator but be sure to allow them to come to room temperature for the frosting to soften back up for the best flavor and texture.
