collards, thinly sliced • Quarter of a small head of green cabbage, thinly sliced • kidney beans • scallions, chopped • Couple handfuls of walnuts, chopped • Cilantro, much as you like • Feta, like half a block, crumbled • Juice of 1 lemon • Olive oi • Salt & pepper • Coriander

herbs. Tarragon is traditional, but use any mix you like of cilantro, parsley, dill, etc. I've even used carrot tops • scallions • garlic • avocado (optional) • Greek yogurt • mayo • Juice of 1 lemon • coriander • cumin • Cayenne or red chili flakes (optional) • Salt & black pepper
