Milk Chocolate Macarons

Combine the almond flour and powdered sugar, then sift together.

Beat the egg whites until foamy, then add half the granulated sugar and continue beating. Once the mixture is thick, add the remaining sugar and beat until stiff peaks form. The meringue should be firm and glossy, with no sugar grains remaining.

Add the food coloring to the almond flour and powdered sugar mixture. Pour half of this mixture into the meringue. Gently fold with a spatula, then add the rest of the dry ingredients. Fold by pressing the batter against the sides of the bowl (this is called macaronage). The batter should flow in ribbons when lifted.

Transfer the batter to a piping bag fitted with a plain 7 or 8 mm tip. Pipe the macarons onto a silicone baking mat or parchment paper. Tap the baking sheet to spread the macarons. Let them sit for about 15 minutes to form a skin. Preheat the oven to 290°F (145°C) and bake in the center of the oven for about 16 minutes. Baking time may vary by oven. Remove the baking sheet from the oven, slide the mat onto the counter, and let cool for at least 5 minutes.

For the milk chocolate ganache: Pour the heavy cream into a saucepan, add the granulated sugar, and bring to a boil over low heat. While the cream heats, melt the chocolate in the microwave or over a double boiler. When the cream is hot, pour it over the chocolate in two additions. Stir from the center outward to create a smooth, shiny ganache. Add the butter in small pieces and mix until smooth.

Cover the bowl with plastic wrap and chill the ganache until it firms up. I prefer to make it the day before. The next day, fill your macarons with a generous dollop of ganache and let them rest in the fridge for 24 hours so the macarons absorb moisture from the ganache. Take them out 30 minutes before serving.

Also be careful to follow the instructions when performing the macaronage. Also be sure to properly dry the macarons. If it's difficult to make them all the same size, before squeezing out the dough, draw small 2.5 cm circles on the underside of the parchment paper to make it easier. I prefer to make these myself at home and just play around with the flavors, as there's really nowhere to buy them where I live...not to mention they can be pricy when I do find them (anywhere from $2-$5 per cookie!) They can be finicky and they require patience. Once you master the basic recipe, you can make endless flavor variations. I'm by no means an expert, but this is the basic recipe that I use. To make them different colors, use 2-4 drops of gel food coloring and add it to the eggs once soft peaks have formed, then continue to whip them into stiff peaks. Keep in mind that they will turn out a shade or so lighter after baking than the batter is initially. You can also add up to 1/4 tsp. of a flavored extract at the same time as the food coloring. As soon as I saw these two colors of dragées, I had an inspiraiton. My first inspiration was the colors of Snow Miku (winter-themed Hatsune Miku). Both Snow Miku and Frozen fit the image of these macarons perfectly.The oven temperature will vary depending on the season (and the room temperature).In the winter, start at 200°C and go to 130°C. In the summer, start at 180°C and go to 120°C. Observe the macarons and adjust. This recipe aims to create the ultimate moist and rich macaron without using cocoa powder.-If you use fresh egg whites, the macaron shells will crack and the "pied" or "foot" of the macaron will not form properly. You have to use old egg whites.-The success of Italian meringue depends on the temperature of the syrup and when you add the egg white.
