The flavor that you can find in this sauce is sweet, burnt and a little acid... very tasty! And this sauce is delicious on EVERYTHING!!! So with capital letters. Because it tastes delicious from a freshly made tortilla, to some huevos rancheros!!! In pork rinds, in nachos, in broths, etc. etc. and perhaps it is well known by all. The flavor will vary a bit depending on the tomatillo and how long you let it roast. And the same for the roasted chiles. If you let them burn it will taste bitter!!! But here is my way of doing it. For you!!!

Ingredient’s:2 pounds of husk tomatillo
1-2 big cloves of garlic
2 cups of Japanese Chile or rat tail
Salt to taste
Teflon pan or comal to roast the chiles and tomatillos

Remove the skin from the tomatillos and wash them perfectly, but first remove the cavo from the chiles and put them on the comal , stirring to prevent them from burning, because your sauce will become bitter. And don't forget to turn on the exhaust hood in your kitchen, otherwise you'll have a coughing fit.

When they are completely roasted, they have to removed from the heat and put in another container and set aside. Put the tomatillos in the same saucepan, add the water and stir constantly, until the water is consumed and let them roast a little. The aroma that you will perceive at home is the richest... That will whet your appetite!!

Once everything is roasted, put the chilies, the tomatillos, the garlic and the salt in the blender in "chopping" mode. It is turned on for about three minutes and emptied into a container, this sauce is a bit thick, if you prefer it lighter you can add more water to leave it to taste.
