I had a few technical problems with execution on these...but they tasted awesome....1 It only took 20 min to cook, also recipe said ungreased pan but some of them stuck to pan then it caused problem for filling them cause they had holes in the bottom, but some were great.....so instead of wasting it i layered cream then chocolate icing, the messed up pastry, more cream chocolate,cream the good eclaires drizzled with the icing, hey first time not perfect but i improvised n it was fine....definitely gonna make again....practice makes perfect....but its a great recipe....Thank you:-P

Sweet! They look great! I just bookmarked! They sound pretty simple. So give me a heads up on the tricky part. I'm going to grease my cookie sheet, so they don't stick, like yours did. Also, when you cut them horizontally, how do they go back together? :detective

Ok, that's what I'll do. Butterfly it is. ;-) so these eclairs are what held us back from Florida. Hope they were worth it! Hahahaha! Just playin.... :-D they certainly do look good!
