Thanks Hiroko! I used your method for the broth using the ingredients I bought in Japan. Dashi bags are saving my life 😂 then adjusted the toppings with spring onions, plus some goma-ae mushrooms on top 😍😍😍

Thank you for trying my recipe for the soup. I am from the western side of Japan where Udon Soup is light and delicate. In eastern side, it is dark and heavy. I still remember the culture shock when I first tasted Udon Soup in the east. For me, Udon Soup must be in the colour that you made. Looks yummy.
