I did a double brew thus onion a bit blanched but still tasted b . . . y nice.
Looks a bit colorless but tasted good, of so the wife said.
This turned out very nice, very easy, I think I would put more chicken in next time

This turned out very well and easy to make. After I sliced up the chicken and mixed in the Cajun seasoning and garlic I covered it and returned to the fridge for a couple of hours before cooking. the wife loved it and it will be made again.
I couldn't get the green enchilada sauce so used all red and rather then onion salt I diced an onion, put half through the filling mix and sprinkled the rest over the top after the sauce and before the cheese
