Cooked again with my original temp of 275 and skipped the overnight brine for injecting with my apple juice based pork butt injection. Super happy with the results but will cook again using the brine sometime before winter.

I'm cooking a rib cap roulade! Have been going crazy to try this! Should be the perfect dinner for a quiet evening at home to accompany cocktails, appetizers and a twilight zone marathon. I'll post the finished recipe tomorrow. Happy new year!!!

Happy late and unconventional Thanksgiving! Leftover smoked ribeye with portabella au jus served with GF dressing, seasoned smashed potatoes, sriracha deviled eggs and GF apple cake!

These are great! While making them we realized we did have the cream cheese on hand to help bind them so we used a GF Panko and egg mix. The sausage and the rich portabellas with the seasoning is the perfect appetizer. Great recipe!

Great recipe! We also fried up some chicken tenders and served with Raven's oven crisp zucchini fries. All works really well with GF substitutes.

Super easy and very good recipe! This also passes what I consider an important test for GF recipes, does it taste good and have a good texture the next day. Yes this does! Assuming you don't eat it all right away.

Awesome recipe! We made this using fresh peppers and tomatoes from the garden along with homemade corn tortillas.

Great recipe! For someone who has as a gluten issue and eats a good amount of corn tortillas it's always great to find easy recipes that are very flavorful. I used peanut oil and added a dash garlic powder, paprika and ancho chile powder.

So love this recipe! Super easy for a weeknight meal and used the same recipe to make tilapia fish sticks to go with them. Only made adjustments for my gluten issues, but cutting the the zucchini into fries is amazing!!!
