This morning I picked the last of the blackberries and made a syrup with it. I thought chestnut pancakes would be a good autumnal accompaniment. Inventing and experimenting with new ingredients is one of the reasons I #ChooseToCook 🍂🌰These are called Netti in Italy. Traditionally they are cooked in olive oil not butter, but I can't help myself and my French mum's roots! Recipes are there to be adapted.Netti are also traditionally served with ricotta but I only had yoghurt and for me, it was delicious. Netti are classic Italian cucina povera, used when there was little else but chestnuts that could be ground into flour. I love that wherever you go there is a variation on pancakes or flatbreads cooked over fire, from Wales to Mexico to Italy to France.These are made with chestnut flour which you can find in health food shops or perhaps Italian delis, maybe a supermarket?Enjoy these, and adapt whichever way you like.

A few months ago, my husband tried cooking. His cooking is to follow every word in the recipe. One of the recipes he tried required Apple Cider Vinegar, which I didn’t have because I don’t use it for cooking. He only needed a very small amount and I said to him ordinary vinegar was good enough. Of course he bought a bottle as the recipe needed it. Since then, the almost the whole bottle of Apple Cider Vinegar has been sitting in the pantry. I decided to use it but the flavour is not suitable for what I normally cook. So, I am using it for drinks. This is my favourite so far.

I love barley. And I dont think you can beat Chicken and Barley soup. I made enough for 2. We enjoyed it for lunch. Lovely jubbly.Pearl barley cooks faster than pot barley and is more whiter in colour takes about 35 minutes to boil and cook.Pot barley takes longer to cook about 50 minutes.
