I came up with this dish after visiting the Stone Food & Drink Festival in Staffordshire.I was there with good friend and fellow author Fiona Collins and also to support another good friend and Vice President of the British Culinary Federation, Matt Davies, Respectfully known in the industry as the “Godfather of the Staffordshire cookery scene” who was sharing stories from his fascinating career in aid of the amazing charity ‘Hospitality Action’Once all the goodbyes were done, I decided to stroll (at snails pace) around the charming little town of Stone, trying to come up with a few dishes that would support the local businesses and produce from the county of Staffordshire.Eventually I came across a lovely little Deli & Cider store called Mo’s, that sold some amazing produce including Artisan cheeses and the best homemade butter I’ve tasted.Now in search of a local butcher I was, by recommendation told to visit Griffin’s of Stone, that was tucked away down a side alley just off the main high street.Top quality local produce was presented beautifully in this butchers, the owner was so proud of his produce and rightly so.#Dinner #lunch


Irish Stew
Have read a Cookery Card from the IMP (International Masters of Publisher's) on the Recipe for making Irish Stew,so I know what ingredients are involved.My Recipe is a homemade Lamb Gravy,for which I cheated by using 3 Knorr Lamb Stock Cubes,but don't get me wrong - for the gravy for the stew was not easy too make.The Leg of Lamb (unfrozen) was not cheap,it cost very nearly £19.00 in the UK's big Supermarket ASDA.

To my children, here is your mother’s ‘Beef Stroganoff’ recipe that you have been enjoying since your childhood. It’s not hard to cook. You don’t need to buy a packet of ready-made Beef Stroganoff seasoning. Make sure you have sour cream and good quality beef steaks in hand. If you want your ‘Beef Stroganoff’ tastes same as mine, use Massel’s Beef Stock.

Store bought Frozen Meatballs was a lifesaver for me when I was a struggling mother of two young children. I was alone as my husband was alway away from home, I was terribly busy, and started to suffer from depression. Best Slow Cook Stew Ever
I’m not a fan of stew, but my other half’s Nan made one for us and it’s the best one I’ve ever had and now a top 5 meals of mine. I’ve tweaked it from her recipe and it’s 10/10! No instructions needed, just brown the meat and throw it all in a slow cooker and leave it on low for 6-7 hours, stirring occasionally. You won’t regret it! I served mine with butter sweet potato mash.

Chilli Con Carne
I used to buy Maggi’s Chilli Con Carne spice mix to make this dish. But once I have learned what spices I need to make it, I don’t need pre-made spice mix. This dish is very simple to make. Sometimes I add extra Chilli or less Chilli, other spices like Oregano, more Tomatoes, a little bit of Sugar or fresh Coriander which my husband hates! Please alter the flavour to suit your taste.


Curry Chilli Con Carne
When I am too tired to think about dinner menu, I tend to cook some same easy dishes that I have been repeatedly cooking. ‘Chilli Con Carne’ is one of them. And Curry is another. This time, I combined those two dishes. I simply replaced the spices for Chilli Con Carne with Curry powder. It was delicious, of course!

Individual whatever you've got quiches
Great way to use up leftover veggies and fresh herbs. I use gluten free plain flour mix for myself or regular plain flour for the rest of the family, both work well.Freezes well and can be defrosted in the fridge then gently warmed in the oven or served cold if preferred. Makes 4 or 5 depending on size of ramekins.

★ Healthy stew with sour cream ★
Stew uses a lot of butter and flour and is high in calories, but I made it without butter. I also didn't use a mixture of butter and flour called ``beurre manier'' for the thickening, and instead used potato starch. By thinking about the calories in my daily meals, I was able to lose 10 kg, and now weigh 47 kg. #GoldenApron23
