This is a very good idea, I have a lot of potatoes don't know what to do with them. I was told we cannot freeze potatoes, so yours is a good idea I am going to try now.

They turn a little soggy after thawing but they can still be easily handled without breaking...plus once they are rolled in breadcrumbs and fried you won't even tell how far in advance they were madeJust don't keep too long
