Hmm Interesting never seen it like this before. Looks good!! What country is this recipe from?
My Mole de Hoya and one I've seen often is more like a Caldo de Res with different veggies; & red on color.

Mole de Hoya from Mexico (Durango, Mx). Oh, and mole colorado from the region in Durango my parents are from is also red (made with chile puya) but sweet and spicy (not just salted).
