Tried this tonight. Very good. I would maybe do a bit more sour cream next. Added a little bit of goat cheese into my bowl to make it a touch creamier.

Thanks for your input! Interesting suggestion with the goat cheese. Hadn't thought of that. And you can't really go wrong with more sour cream. Thanks again!
