Thank you Lucia! It's a shame you can't find the lemongrass as it's such a unique flavour... maybe substitute it with a good amount of lemon zest, it won't be the same, but it will give a citrus taste to it. Enjoy!

I love red and yellow curry with salmon too. I think it goes lovely together. I would cook it a bit longer than prawns maybe take 12-15 min to cook salmon.
