You can use any blender or a smoothie blender.The reason you should allow d dough rest for 30 minutes is Resting the batter allows the flour to fully absorb the liquid and gives the gluten a chance to relax. You could skip this step but it is the secret to the most delicate, melt-in-your-mouth crepes
