Sorry for reply late. I haven't explored an eggless version of scones, but basically omitting eggs will result in a more denser texture. I would suggest vegetable oil to act as a leavening agent instead of eggs. May be a 1 or 1 half tbsp. I haven't actually tried it so please don't hold me against my words. :D
