You said add a cup of water - but the baingans are stuffed with the masala ........... don’t you think the masala will get dislodged & come out ?

Yes baigan needs to be tender, adding water to it is necessary and once you cover it with a lid and cook, baigan will soak the water

Maybe typo ginger powder & clove are not mentioned in the list of ingredients ........

It's up to you if you want to add spices like, I haven't not used them so not mentioned
