fyi: this is as basic as a ricotta gnocci can get. you can also add seasonings, powered parm cheese, etc. for more flavours

First, this makes a ton! But don't let that intimidate you. These are so simply delicious and have become a staple in my home. Cook what you need and freeze the rest on a cookie sheet. Once the extras are frozen you can keep them in a ziplock for a few months.
