Hehe, yeah, it's used for thickening and actually there is are dumplings made with only semolina called Grießklösschen :)

I was taught to boil the potatoes and then mash them. after that, add flour and egg and mix to form a dough. fill with spiced bacon, form into balls, and boil until they float. I'll post a recipe soon

Of course, she made more than would be eaten, because the next day, she would slice up the knoedels, fry them in butter, and then top with bread crumbs!

Those sound amazing!! I've made a version with boiled potatoes before too, but no bacon! I love how the left overs always turn into delicious skillet dish too ;) We used to do that with Maultaschen!

This is my mom's recipe the only thing different is my mom use mashed potatoes instead of bread crumbs and also besides flour she added corn starch raw potatoes were really wrug dry. I am 65 will be 66 soon and my mom was born in Germany my Dad brought her to the United States of America early 50's I have more recipes of hers I will have to post them as soon as I have more then just a small smartphone it hard for me to see what is being put down..

Same here! My mom is German and my dad brought her to the U.S. after we spent some time living in Stuttgart. My German grandmother's cooking was to die for. I would love to see some of your recipes too :D

Followed to the letter. Have made cooked potato dumplings many time, but this is the first time making "green" (raw). So they went into the water, and promptly dissolved into grated potato floating in water.
