I made this this evening for dinner, thinking that just based on the ingredient list it would be yummy. Well, that's an understatement! The tropical taste is delicious, and a welcomed change during the chilly weather. :ohyeaah

I've been making this cake for years!! What I use instead of the cream of coconut, is the pina colada mix. It thins out the condensed milk a little more and makes it easier for it to be absorbed into the hot cake. :positive

Awesome cake! My husband loved it so much I made a second one only days later. Gets better the longer it is in the fridge. Cream of coconut is hard to find but it was in our liquor/mixers aisle.

For those who don't like pineapple: I've made a very similar recipe using non- alcoholic pina colada mix(in alcohol aisle) instead if coconut milk and omitting the pineapple...very requested!!

I have made this type cake for several years, I usually make it when I'm voluntold to bring dessert for a dinner/get together. Instead of putting the pineapple on top after the cake has baked I mix it in with the cake batter when I cook the cake and mix the cream of coconut, eagle brand and pineapple juice together and saturate the cake (I usually wind up with about 2 cups total of this mixture). Not only does it thin the eagle brand I think it brings all the flavors together even more.
