You should always allow meat to rest after cooking (at least 10-20 minutes) as it will allow the juices to absorb back into the meat.
If you want to let it rest a little longer, cover with foil.

That is a corking looking piece of meat! The sort of cut that I would genuinely cry if I got the cooking of it wrong so thanks for the cooking info, really helpful :)
