No. As long as you follow the time and temps it will work fine.

how long would you cook a 8lb and 7lb roast together

I have never done 2 at a time but seeing how it's based on the weight not size as prime rib is basically the same in diameter regardless of weight. I would use calculations for the 15lb total.

what do you do if someone opens the oven after turning it off?

No idea. I've never had it done to me. I would suggest turn oven back on for 5 minutes then back off

do you still use 5 minutes per pound when the roast is 3.3 lbs?

Should you adjust your cooking time for medium rare if the roast has been boned - less than 5 mins per lb?

I have never tried it that way. The bone acts as an insulation barrier. So perhaps a large plate upside down to set the roast on should give enough insulation from the bottom of the pan.

Totally comes out awesome with this method, we do the same x-amount to start then x-amount per lbs.

I've tried shutting off the oven and leaving the oven door closed 2i hours for other recipes, but my oven cools off too quickly and it doesn't cook correctly. Do you have another alternative?
