Could u use canned apple pie filing ?

I don't see why not! However, skip the step where you coat the apple in sugar and cinnamon since the pie filling will already be flavored!

I am doing a project for something and I have to use a cake/bread mix. what kind of mix do I use?

Not sure, maybe could try a vanilla cake mix? the texture will be more cake like than bread but will still be good I'm sure.
