I just follow the instructions but it turn out that the bread is not light but heavy and not crispy, How can you help me ?

Lavender @Lavender
Sorry for late reply. At First , you should knead the dough until window pane texture. And bake like my step by step guidance. Hope this helps! Happy baking!

I don't have bread flour. can I just use all purpose flour? I also have self rising flour

Lavender @Lavender
You can use all purpose flour. Self rising flour for cake only, not for bread.

Once you turn off fan and reduce heat, how much longer do you cook the baguettes?

This recipe is well written and was easy to follow. I didn't knead my dough long enough and I rushed the proving, so my bread came out a bit dense, but still delicious! Thanks for a great recipe.

You state to reduce oven to 200C and turn off fan, I've got a fan forced oven but can't turn fan off should I reduce oven to lower temperature or cook for less time thanks

Lavender @Lavender
Sorry for latety reply! No need to reduce oven temparature! Bread need high temp to bloom !

Hi Lavender. I am from Biloxi, Mississippi and we have a great community of Vietnamese families here. I regularly bought wonderful french bread from a family owned business in the community, but sadly Hurricane Katrina took away a lot of small businesses including that one and I have not found another. . So I was so happy to find your recipe! Keep on cooking!
