you can use butter and oil equal amount in your skillet to pan fry these bad boys. about a tbl sp or so each. for each batch in your skillet. I usually make 4 at a time. sometimes when I flip them over to do the other side cornmeal picks up a lot of moisture and have to add more butter n oil. bacon drippins are awesome,but I never have any hang in around lol.

Just wanted to add advice for this recipe! I've made it for years just using self-rising cornmeal mix, sugar, and bacon grease, if you have it, if not use vegetable oil, 2 eggs, and milk-- not water! the eggs & milk binds the batter together. I hopes this solves alot of issues. it truly is a great skillet bread.

Made these as a side dish. our family and company Loved them. Tried plain and then with a little maple syrup on top. Really good either way. Reminds me of hush puppies.

Top with ground beef, beans, rice, salsa, sour cream, or guacamole to make a "cowboy enchilada". Family favorite at my house!

I love the concept, but these were extremely dry and needed salt, maybe even a little more sugar. Sorry, I really wanted to love these.

I use corn meal and hot water but that is just how my grandma madr it when I was growing up. my fav!
