I have this same recipe, been using it for years. Two things I add are...1) stuff the cavity with quartered onions, it adds to the flavor and moistness but ppl that don't like onions don't even have to know they are in there. :) And 2) If you can get it out of the crock without it falling apart, put it under the broiler for about 5 minutes. Makes the skin crispy and golden and wonderful!
