Do not fill the bottle all the way up, and do not screw the cap on too tightly, otherwise bottle can explode due to CO2 buildup. also leave for up to two weeks in dark room temp spot. This will contain alcohol, no matter how long or short you let it sit and ferment, but homemade Ginger Ale (more properly Ginger Beer) is not only delicious, but also healthy do drink.
