I do a spinach and eggs also, but I make a bed a spinach and cook it down then place the eggs over the bed and cook until the eggs are cooked to liking. Then add spices to finish.
I like runny yoke eggs with this because it goes well with the spinach.Btw. Thanks for the 💟 on my Mac and cheese!!
