This cake turned out delicious! Very moist and not gummy like some other vegan cakes. And you'd never know there was avocado in it! Couple of notes: I blended the avocado with some of the water to achieve a smoother texture instead of mashing it. Also, next time I make it I may add a little more sugar - it was good (and healthy!) but in my opinion not sweet enough for a chocolate cake. As for the frosting... well, that was just a mess. It ended up tasting too much like avocado so I had to toss it. I used fresh strawberries instead. This is definitely a keeper though!

I just made this and I'm completely flabbergasted by how good it is. I used a teeny bit more sugar and deleted the oil and it STILL turned out wonderful. It didn't swell or collapse, and it tastes very good. I'm impressed. :-) I skipped the icing, so I can't comment on that part, though.
