I like the idea but the cream cheese mixture tasted very bland yet gross. I had to add a lot of stuff to it, but then it wasn't stiff enough. I think next time I'll use some kind of whipped cream mixture or a chocolate mousse.

They look gorgeous Vicky and they're so easy to make! Everyone could do that! Onfortunelly we don't have great strawberries right now, only in summertime. That is if you want sweet ones! They import them now ...for Christmas, but those are hard and sour to taste. And not ripe...the point's white! We don't like those. We only eat sweet ones. And making santas's in the summer....hm...kind of weird! But i do love them! (L). :santa. ;-). :flower

u could use small bits of broken peppercorn for th eyes as the contrast of the heat with the sweet and the cream would be nice.

I made this last xmas for several work and family xmas parties. They were delicious. I used sprinkles for the eyes instead of poppy seeds.
