This looks delicious! I've some Brussels sprouts and carrots in the fridge. Perhaps I'll try this out for tomorrow's dinner. :-)

I love roasted brussels sprouts...the addition of carrots sounds yummy. I would recommend rinsing the sprouts before cutting them in half though, as the water gets in between the leaves and can lead to the sprouts being steamed rather than roasted. :piercing
