My MIL got this recipe when her oldest son was in Boy Scouts from another mother and would make it for birthdays. I couldn’t find her recipe last week and was looking online and found this. This is her exact recipe EXCEPT WE FREEZE IT! We eat this dessert frozen - as an ice cream cake. It is delicious. I have never eaten it refrigerated. Our favorite combo is Vanilla Ice Cream with Coconut Pudding (I usually toast coconut and sprinkle on top with the additional ritz crumbles…).

The recipe that I received from my mother-in-law, didn’t mix in the cool whip, but instead used it as an icing with reserved crumbs sprinkled over the cool whip. Freeze until time to serve giving it about 30 minutes to soften. Her recipe also called for using 1 large box of instant pudding instead of 2 small boxes. Tasted great, so I guess there are many different ways to make this yummy dessert.

Our recipe for this adds 1/2 C. chopped nuts to the crust. It was our New Year’s Day dessert when I grew up. I love it.
