My youngest son loves this. Our recipe calls them Ox Eyes, but it's the same thing. Only difference is we add some seasoning salt to the egg. Thanks for posting it! :-)

In Louisiana this is an old favorite, but they call it "Toad in a hole", and when cooking the second side you can place a slice of Canadian bacon under the egg.
