This dish is similar to Eastern European or Asian Pilaf and or Risotto or Paella, where the rice is slow cooked for the rice to absorb the flavours. Well written and easy to follow instruction.

i want to play with this recipe, but i think the eggs are fried scrambled and then folded in, and I am wondering why take a whole roasted chicken and pick it...why not cook rice in chicken stock and cut up some of the roasted chicken and lay on top..still i will try this. Good to have a Peruvian in the house!
