Hi! I use dried kelp. That’s how we usually take broth. Please put in the water for an hour before cooking. Also, please do not boil the water with kelp as the taste will do down. You can also add bonito flakes (katsuobushi) together with kelp and sieve it after cooking for few minutes. Broth with bonito flakes will add more flavours.
