Thanks Yui. To be truthful, whilst I did as so often cook this to use things up, it’d be worth buying the vegetables specifically for this soup - or, better still, use home-grown produce.

Excellent. Yesterday I made soup with the left over roasted vegetables from Sunday’s lunch with homemade chicken stock from the carcass, to which I added a fresh red chilli complete with seeds. Packed a nice punch 🤣
