My understanding is the pectin that Persimmon contains sets the mixture in reaction to calcium in Milk.

@para_pabulum I don't know any other fruit. I was amazed at the result when I first made this jelly.

@hirokoliston it is really amazing 😍 definitely must try this recipe when i get my hand on persimmon next time. We dont have it here in Bangkok. But in Northern Thailand we can find some in winter.
