What would be a good substitute for the white chocolate? I am dairy free and have dairy free butter but not sure what to do for the chocolate. Also, I see your down under can you share a recipe for crumpets? My friend from Adelaide area sent me crumpet tins but forgot to enclose a recipe! I have a kitchen scale that can measure in grams if needed

Try simple Butter Icing. You can find Lemon Icing recipe in my 'Melting Moment' recipe page. Replace Lemon Juice with Milk of your choice OR Water. https://cookpad.wasmer.app/uk/recipes/8571140
