I made blackberry brandy last year..........1 kilo blackberries.....1 kilo demerera sugar and one litre of cheap as chips brandy, bung it in a demijohn, cork it and give it a good shake every day until sugar is dissolved then a good shake once a week, filter off after 3 months....jobs a good `un. This year I did it with a litre of Gordons gin with the addition of a stick of cinnamon, maybe I used too much sugar this year, we will see, I`ll filter it off end of september. A friend suggested a layer of blackberries, a layer of sugar, layer of blackberries, layer of sugar and so on in a demijohn to the top, let it ferment down with a loose cork in the bottle. you have a workmans winter warmer.
