@ChrissyAlpha Living in TX, eating Pierogi's is not a thing. I have always wanted to try them. I know they have to be delicious. This recipe inspires me as although time consuming, fairly simple to do!

Oh yes! You totally should give it a try! You can always make the filling on Day 1 then continue the remaining steps on Day 2 to break up the work a little. The dough is a good texture once you let it rest, and it’s easy to work with. If you have just one helper to assist with the rolling, filing, or boiling, it makes the work go that much faster. If you ever decide to give it a try and have questions or problems, I’m happy to try to help!

When I did it, I made 46 pierogi. It really depends on the size of the pierogis you make though. Mine were a little on the larger side, which is how I like them. If you eat two large pierogis, they’ll make up the bulk of your meal. 🤤

@ChrissyAlpha Wow, that's quite a few. I may just half your recipe for now, would let me get a good feel for everything. I guess they freeze well. I have seen them in the freezer section. I do know that in general, cooked potatoes just don't freeze well.

Sounds like a good idea. The hardest part is not ending up with too much dough or too much filling at the end. Haha. I think that you’re right about potatoes not freezing well, in general. If I had to guess, maybe the reason potato pierogi freeze so well is either because of the higher fat content in the filling, or the fact that the potato filing is nicely sealed within dough. Maybe both. 🤷♀️
